25 ml Oil
10 ml Curry powder (or to taste)
2 ml Tumeric
1 Onion (chopped)
500 ml Boiling water
12.5 ml Chutney
5 ml Salt
Pinch of pepper
500 g Raw beef sausage
1 can peaches/apricots (Cut into pieces)
375 ml Uncooked rice
Spring onion for garnish (Optional)
Peel and chop onion. Saute onion in the oil. Add curry and tumeric and stir fry lightly. Add water, chutney, salt and pepper and cook it for 2 mins. Cut sausages into +/- 4 cm pieces and pack it into a greased baking dish with a volume of 2 L. Add onion mixture evenly over sausages. Pack peach/ apricot pieces unto onion layer. Sprinkle rice over peaches/ apricot layer. Use the juice left in can from peaches/ apricot and pour it over the rice. Place the lid onto the baking dish and bake for 45 mins on 180*C (356*F). When cooked remove from the oven and stir. Garnish with spring onion.
